Vanilla Meringue Cookies (蛋白糖) | The Chinese Cuisine

These light meringue cookies have a satisfying crunch yet melt in your mouth like cotton candy. They are easy to make and only require four natural ingredients!

INGREDIENTS
- two egg whites
- 1/4 cup sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon vanilla extract
- food coloring (optional)

DIRECTIONS
1. separate egg whites from egg yolks
2. beat the egg whites, gradually adding in the sugar
3. add in apple cider vinegar and vanilla extract (food coloring if wanted)
4. keep beating until the egg whites form hard peaks and look shiny and smooth
5. put egg whites in piping bag with star tip or any preferred tip
6. pipe onto silpat or baking sheet into equal sized 'cookies'
7. bake for 90 minutes at 200 degrees Fahrenheit
8. let cool and enjoy!
