I have to be honest, in Crete they do make the best rusks called Paximadia in Greek. They are PGI Cretan products, super healthy, really delicious and are part of the everyday meal in the Cretan households.
To indulge themselves, they have also created small, sweet Rusks, very similar to the Italian Biscotti. You can make them plain, just with orange juice or add almonds and currants for that extra crunchy, surprising bite, like I show you today!
Not hard to make and they do make a little, everyday indulgence with coffee or tea.
Let me show you how to prepare these beauties.
Suitable for every occasion, but also for vegans and fasting.

INGREDIENTS:
3.6 cups / 450 gr. / 1 lb All-purpose Flour, sifted
cup / 110 gr. / 3.9 oz Sugar
cup / 125 ml Olive Oil
cup / 125 ml fresh Orange Juice
Zest from one medium, washed Orange
1 tsp. Baking Soda
Almost 1 cup / 110-140 gr. / 3.9-4.9 oz Sesame Seeds
cup / 70 gr. / 2.5 oz Almonds, unblanched
cup / 60 gr. / 2.1 oz Currants
Optional: 1 tsp. ground Cinnamon
