★Egg Drop Soba Noodle soup★〜Keiran Soba けいらんそば〜(EP158) | Kitchen Princess Bamboo

Today I want to share with my winter favorite, egg drop soba noodle soup!

After the holiday's feast, our stomach needs holidays. Lol.

Soba noodle soup is Low in fat but satisfying.

And soba noodles help your blood sugar control, and it‏ contains anti-oxidant property.

I used to Kuzu starch to thicken up dashi soup, but you can use potato starch or Cornstarch instead.

Kuzu starch is known as an eastern medicine to cure the flu.
Warms up your body and boost your immune system. Get one if you find it!


・Dashi Broth for Soba
20 g bonito flakes
500 ml water
½ tbsp light soy sauce ※regular is fine
¼ tsp salt
2 tbsp Kuzu starch ※use less corn starch and potato starch
1 large egg
・other ingredients
1 bunch dried soba noodles (90g)
1 stalk scallion
1 tsp grated ginger
