Eight (Twelve!) Treasure Congee (八 (十二) 宝粥) | The Chinese Cuisine

This recipe is extremely delicious and easy to make. This congee is packed with healthy, protein-rich beans and is just lightly sweetened with dates and rock sugar. You can adjust the amount of water to make the congee as thin/thick as you want!

INGREDIENTS (8 servings):
- 1/8 cup raw, skinless peanuts
- 1/8 cup lotus seeds
- 1/8 cup mung beans
- 1/4 cup red beans
- 1/4 cup white beans
- 1/4 cup kidney beans
- 1/4 cup pearled millet
- 1/2 cup glutinous rice
- 1/4 cup pinto beans
- 1/8 cup goji berries
- 6 diced medjool dates
- 1/2 cup rock sugar

DIRECTIONS:
1. combine all ingredients except for goji berries, dates, and sugar into a bowl and soak in water overnight. change water twice
2. after soaking overnight add in goji berries, dates, and sugar
3. pressure cook for 30 minutes
4. serve and enjoy!
