The Mid-Autumn Festival is one of the four most important Chinese festivals.Read more: https://en.wikipedia.org/wiki/MooncakeVIDEO ON HOW TO MAKE DATE PASTE: https://www.youtube.com/watch?v=TeevdgbX440RED BEAN PASTE: https://www.youtube.com/watch?v=FXtf6I2shiYINGREDIENTS (6 servings, 50 gr ea):filling:- ~ 1/2 cup dry yellow split peas- rock sugar- 1/4 cup olive oil (you can use less, but the filling will be drier)- ~ 3 tbsp. poppy seedsskin:- 72 grams all purpose flour (1 part)- 18 grams olive oil (1/4 part)- 36 grams pure organic maple syrup (1/2 part)- 1/8 tsp. baking soda- 1/4 tsp. waterDIRECTIONS:1. soak dry split peas for a couple hours or overnight (for easy mashing)2. cook in pressure cooker on 'beans' for 20 minutes. if you do not have a pressure cooker, soak peas overnight and then simmer in a pot for 1-2 hours until softened3. mash peas once they're cooked4. add 1/4 olive oil to a nonstick pan and turn stove on medium heat5. add mashed split peas into oil 6. add in poppy seeds7. combine evenly, until it forms a smooth texture like in the video8. to make the skin, combine flour, oil, maple syrup, baking soda, and water9. mix and knead until it forms a dough10. set aside for 1 hour11. after an hour, divide dough and filling into six balls12. knead the individual pieces of dough and then press with your palms into flat disks13. add the filling, then wrap the dough around the filling. 14. roll in some extra flour, then place in mooncake mold15. bake at 395 ºF for 7 minutes16. brush with egg wash (1 whisked egg + 1 tbsp. water)17. put back into oven for 7 minutes at 350 ºF18. brush with egg wash a second time, then bake for 5 more minutes, at 350 ºF, and then broil until golden brown on the surface (~ 1 minute)19. wait 2 days until serving (for the "oil return" process to take place, place in closed container; the skin will become softer), then consume within 1 week__________________________THANKS FOR WATCHING!__________________________For business inquiries:
