Healthy Mooncakes (健康月饼) | The Chinese Cuisine

Homemade mooncakes are so much healthier than those that are store-bought, and you can make them to suit your own tastes.

A mooncake is a Chinese bakery product traditionally eaten during the Mid-Autumn Festival. The festival is for lunar appreciation and moon watching, when mooncakes are regarded as an indispensable delicacy. Mooncakes are offered between friends or on family gatherings while celebrating the festival. The Mid-Autumn Festival is one of the four most important Chinese festivals.

INGREDIENTS (6 servings, 50 gr ea):
filling:
- ~ 1/2 cup dry yellow split peas
- rock sugar
- 1/4 cup olive oil (you can use less, but the filling will be drier)
- ~ 3 tbsp. poppy seeds
skin:
- 72 grams all purpose flour (1 part)
- 18 grams olive oil (1/4 part)
- 36 grams pure organic maple syrup (1/2 part)
- 1/8 tsp. baking soda
- 1/4 tsp. water

DIRECTIONS:
1. soak dry split peas for a couple hours or overnight (for easy mashing)
2. cook in pressure cooker on 'beans' for 20 minutes. if you do not have a pressure cooker, soak peas overnight and then simmer in a pot for 1-2 hours until softened
3. mash peas once they're cooked
4. add 1/4 olive oil to a nonstick pan and turn stove on medium heat
5. add mashed split peas into oil
6. add in poppy seeds
7. combine evenly, until it forms a smooth texture like in the video
8. to make the skin, combine flour, oil, maple syrup, baking soda, and water
9. mix and knead until it forms a dough
10. set aside for 1 hour
11. after an hour, divide dough and filling into six balls
12. knead the individual pieces of dough and then press with your palms into flat disks
13. add the filling, then wrap the dough around the filling.
14. roll in some extra flour, then place in mooncake mold
15. bake at 395 ºF for 7 minutes
16. brush with egg wash (1 whisked egg + 1 tbsp. water)
17. put back into oven for 7 minutes at 350 ºF
18. brush with egg wash a second time, then bake for 5 more minutes, at 350 ºF, and then broil until golden brown on the surface (~ 1 minute)
19. wait 2 days until serving (for the "oil return" process to take place, place in closed container; the skin will become softer), then consume within 1 week
