Lobster Tail with Ginger and Scallions | The Chinese Cuisine

This lobster stir-fry is delicious, flavorful, and juicy! The green onions and ginger complement the lobster nicely.
*1/4 tsp. salt, not 2 tsp.

INGREDIENTS:
- 3 lobster tails
- green onions, chopped
- ginger, thin strips
- cooking wine
- 1 tsp. sugar
- 1 tsp. corn starch
- 1/4 tsp. salt (NOT 2 tsp!)

DIRECTIONS:
1. cut the lobster tail out of their shells
2. chop lobster into pieces
3. coat evenly in corn starch
4. add oil to pan on medium-high heat
5. fry ginger strips in oil. take out when browned & crispy
6. put lobster into pan
7. after 1 minute, sprinkle in green onions, cooking wine, sugar, and salt
8. stir-fry the lobster for several more minutes
9. serve with ginger strips and enjoy!
