Scallion Oil Noodles (葱油拌面) | The Chinese Cuisine

INGREDIENTS (4 servings):
- 3 stalks green onions
- 1/3 cup (70g) olive oil
- 4 tbsp. (50g) soy sauce
- 280g noodles (Dry)
- 1/2 carrot
- baby bok choy
- egg strips

DIRECTIONS:
1. chop the green onions
2. add to oil on low heat and cook for 6-7 minutes until wilted and light yellow
3. add in soy sauce and cook for 2-3 more minutes
4. boil your noodles normally and add in carrot strips and chopped baby bok choy
5. rinse and drain noodles under cool water
6. add cooked noodles to green onion "oil"
7. coat the noodles evenly in the oil
8. serve and enjoy!
