Snow Skin Mooncakes (冰皮月饼) | wandouhuang + red bean | The Chinese Cuisine

The Mid-Autumn Festival is right around the corner!
The crust of snow skin mooncakes, unlike traditional mooncakes, is made of glutinous rice. Snow skin mooncakes are typically white and are served cold, which is why they are named "snow skin."
Although snow skin mooncakes are usually made and sold by bakeries, these mooncakes are not baked in ovens like traditional cakes. Unlike traditional mooncakes which are served at room temperature, snow skin mooncakes are typically eaten cold.

INGREDIENTS:
filling:
- 1/2 cup yellow split peas
- 1/2 cup red beans
- rock sugar
- olive oil
snow skin:
- 1/2 cup glutinous rice flour
- 1/2 cup rice flour
- 1 tbsp. wheat starch
- 1 tbsp. sugar (more or less depending on your taste)
- 1 tbsp. dry non-fat milk powder
- 2 tbsp. olive oil
- 180 ml (1/2 cup + 4 tbsp) milk
other:
- 1/2 cup glutinous rice flour

DIRECTIONS:
1. soak yellow split peas and red beans in water overnight (they will expand)
2. put soaked beans in pressure cooker, add rock sugar for sweetness, and cook on 'beans' setting for 20 minutes
3. mash yellow split peas
4. alternatively (instead of mashing), you can add the beans (as we did we the red beans) into a blender. blend until smooth
5. add olive oil to pan on medium-high heat and cook the red bean until it dries and forms a malleable paste
6. to make the "snow skin," combine glutinous rice flour, rice flour, wheat starch, oil, sugar, milk, milk powder
7. pour into microwave safe container and microwave in 30 second intervals, stirring in between until it cooks through
8. toast another 1/2 cup of glutinous rice flour in a pan on medium heat. make sure it doesn't burn! it will be slightly duller in color when it's cooked and it will lose the uncooked flour smell (a couple minutes will do)
9. form mashed split peas and red bean paste into balls
10. flatten dough into disks and wrap around filling as shown
11. roll in toasted flour before putting into mold
12. serve and enjoy! (within 3 days)
