Soft Vanilla Sponge Cake Rolls (蛋糕卷) | The Chinese Cuisine

These rolls consist of soft, fluffy cake rolled around lightly sweetened cream!

INGREDIENTS:
- four eggs
- 40g sugar
- 1/4 cup heavy cream
- 1 tsp. vanilla extract
- 3 tablespoons olive oil
- 1/2 tsp. baking soda
- 3/4 cup cake flour
- 1 teaspoon apple cider vinegar
- 1 cup heavy cream
- 1 tablespoon sugar powder

DIRECTIONS:
1. separate the yolks and whites of four eggs
2. add 20g of granulated sugar, heavy cream, vanilla extract, and olive oil to the egg yolks and whisk together
3. sift baking soda, cake flour into egg yolks and whisk together into batter-like mixture
4. add apple cider vinegar into egg whites and beat in an electric mixer
5. slowly add in 20g granulated sugar into mixer. stop mixing when hard peaks form and egg whites become shiny and silky
6. fold egg whites and egg yolks together
7. pour onto baking sheet evenly
8. bake for 12 minutes at 350 degrees Fahrenheit, then let cool
9. to make cream filling, add into mixer heavy cream
10. add in 1 tablespoon sugar powder and whip until it forms a whipped cream
11. spread whipped cream onto sponge cake
12. roll and split into even sections
13. enjoy this lightly sweet, creamy, and decadent dessert!
