Steamed "Hedgehog" Buns (刺猬黑豆沙包) | The Chinese Cuisine

These steamed buns with sweet fillings are shaped like hedgehogs! They are filled with protein-rich black beans with hint of sweetness from natural date sugar and Crofter's fruit spread (which has no added sugars).

INGREDIENTS (12 buns):
- dough (https://www.youtube.com/watch?v=z1bBiYmRQiE) cut recipe in half: 3 cups all purpose flour, 1/2 packet yeast, 1.25 cups milk or water
- 1 can black beans (cooked, canned, drained)
- 1 tbsp. date sugar
- fruit spread/jam
- uncooked mung beans (opt. as 'eyes')

DIRECTIONS:
1. prepare your dough and let it rise for ~1 hour
2. meanwhile, mash together black beans and date sugar
3. divide your dough into 12 even sections
4. knead each individual section and roll into wrappers. make sure the wrapper is thicker in the middle so later you will be able to make cuts into the bun for the hedgehog 'quills'
5. add in a layer of black beans and a layer of fruit spread or vice versa
6. wrap as shown in the video
7. soak some uncooked mung beans in water and squish onto the bun as 'eyes'
8. cut the quills using scissors as shown. be careful!
9. put buns in a steamer and let them sit for 15 minutes before steaming
10. once water comes to a boil, steam for 10 minutes
11. serve and enjoy!
