Stir-Fried Diced Fish (炒鱼丁) | The Chinese Cuisine

INGREDIENTS:
- 400g swai fish fillet (defrosted and soaked dry with paper towels)
- 120g broccoli
- 1 stalk green onion
- 1 egg
- 1-2g sichuan peppercorns
- 10g ginger
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/8 cup (30ml) olive oil
- 8ml cooking wine
- 8 ml soy sauce
- 1 tbsp. corn starch

DIRECTIONS:
1. dice fish into 1.5 cm by 1.5 cm pieces
2. add in sugar, cooking wine, soy sauce, and mix
3. add in corn starch and mix again
4. boil the broccoli
5. whisk the egg, and coat fish pieces evenly in egg
6. add olive oil to pan on med-hi heat
7. add sichuan peppercorn and ginger strips into the oil. after the flavors have infused into the oil, remove
8. add in fish, then green onions
9. break up and stir-fry the fish pieces
10. add in broccoli and salt and stir-fry several more times at the end
11. serve and enjoy!
