Sweet Corn & Pork Rib Soup (玉米排骨汤) | The Chinese Cuisine

This simple, light soup has a flavorful broth, a unique hint of sweetness from the corn, and is great served hot on a cold day (or if you have a cold).

INGREDIENTS (4 servings):
- 4-5 pork ribs
- 1 ear of sweet corn
- ginger
- 1/2 peeled carrot
- 1 stalk celery
- bay leaf
- five star anise spice
- salt
- cooking wine

DIRECTIONS:
1. prepare all your ingredients. divide your corn into 4 sections and chop your vegetables
2. turn to the 'sear' setting on your pressure cooker, and sear the ribs until they are no longer pink/red on the outside. you can also do this without a pressure cooker.
3. while they are cooking, add in slices of ginger
4. after the outsides of the ribs are a bit browned, add in a splash of cooking wine and enough water to submerge the ribs
5. add in everything else: the chopped vegetables, bay leaf, five star anise, and salt
6. turn to the 'soup' setting and let it cook for 20 minutes. if you don't have a pressure cooker, let the soup simmer in a pot for ~ 1 hour
7. serve and enjoy!
