The famous mochi shop in Nara

I got a chance to watch their amazing, fast-pounding mochi very closely!

And I found out this quick Mochi pounding is not for entertainment but for its incredibly soft and melt-in-your-mouth texture.

This mochi does not have a matcha flavor, but Yomogi, the Japanese mugwort.

I'm trying to recreate this at home. Are you ready to exercise in your kitchen?

50g Yomogi paste
from 30~40g Yomogi
Mochi Dough
75g Rice Flour
25g Mochiko
10g Sugar
100g lukewarm water

175g (6oz) Red Bean Paste
